For me, the easy Victoria sponge is such a cake because it needs few ingredients & can be made quickly & modified if need be with lemon or orange zest etc.
This past week, I had some friends dropping by & so it was time to whip up a quick Victoria sponge for tea ....
It is one of the easiest recipes - just 4 ingredients & easier still if you cut out the lining round a few at a time & keep them handy with the recipe:
Preheat the oven to 180C (or 170C for a fan oven or it browns too quickly)
180g room temperature butter
180g caster sugar
3 eggs
180g self-raising flour
3 tablespoons jam
120g whipping cream
icing sugar for dusting
Beat the butter & caster sugar till pale & fluffy. Beat the eggs in one at a time; sift in flour & mix to combine.
Spoon the mixture into 2 greased & lined sandwich tins, smoooth top with the back of the spoon & bake for 20-25 min until it springs back or a sharp knife comes out cleanly.
Turn the cakes onto a rack, peel off the paper & leave to cool.
Sandwich together with jam of your choice or jam, fruit & the cream if you are feeling decadent.
Dust with icing sugar & enjoy ♥

Present it on a pretty cake stand & it just looks special ♥
