A batch of Millies cookies …

Hi everyone, it has been another week of rain, hail, sleet & even some sunshine in the Shire. Spring is reluctant to arrive.

I have been house sitting for neighbours who have been abroad for a family wedding & since they arrive back today, I decided to bake a little treat to enjoy as they unpack & relax again.

My Wondering Star daughter & her man Andy always made these cookies as a late night treat when a little sweetness was needed.

These are like Millies cookies & are quick & easy to make.

The ingredients are:
125g softened butter
100g light brown sugar (I cut down on the sugar & only used 120g combination of both)
125g caster sugar
1 egg, beaten lightly
1 tsp vanilla extract
225g self raising flour
1/2 tsp salt
200g chocolate chips (I used dark & milk chocolate chips)





Preheat the oven to 180C / gas mark 4


Cream butter & sugars & add egg & vanilla extract. (I cut down on the sugar by using only 120g combination of both - this did not effect the taste at all.)

 Sift in flour, salt & add chocolate chips.

Roll in to walut sized balls & lightly flatten between the hands. Place a little apart on greaseproof paper. These 4 had to be baked separate as the tray was full.


If you want them slightly softer, bake for about 7 minutes, or 10 minutes for a slightly firmer cookie (my choice)


Cool & enjoy with a cuppa or serve warm with a bit of ice-cream on top for a quick pudding.

Very quick to make from things usually in the cupboard (I always keep a packet or two of chocolate chips in the baking cupboard.

  1. They look marvelous, Dee! I love how you all call dessert pudding! Is cuppa tea or coffee? My standby in FL is oreo ice cream cake, layer oreo cookies, vanilla ice cream, freeze, cover with chocolate syrup, freeze, top with cool whip, freeze covered-last for several weeks.

    1. They are so good Lynda - over here they call supper 'tea' - I kid you not. I am South African & tea is a cuppa with a slice of cake not an evening meal. I always check with friends what I am invited to when they say 'come for tea'.

      Pudding is a casual something at the end of of supper (not as posh as dinner when you would have dessert) … confusing hehehee

      PLEASE post a picture of your Oreo Ice-cream cake - it sounds like heaven. One of my students recently made an oreo cheesecake & it was soooo good!

    1. They are very good & best of all, quick to make. The lads made these quickly tonight when they visited then took some home to have with a scoop of ice-cream for pudding ....
